Ingredients:
4 large baking potatoes (Russet or Maris Piper work well)
2 tablespoons olive oil
Sea salt
Freshly cracked black pepper
Optional toppings: butter, sour cream, chives, cheese, or baked beans
Instructions:
1. Prepare the Potatoes: Wash the potatoes thoroughly under cold water to remove any dirt. Pat them dry with a towel. Using a fork, poke several holes in each potato to allow steam to escape during cooking.
2. Season the Potatoes: Rub each potato with olive oil, then sprinkle generously with sea salt and freshly cracked black pepper.
3. Wrap in Foil: Wrap each potato individually in aluminium foil, ensuring they are completely sealed to retain moisture while cooking.
4. Preheat the BBQ: Prepare your wood-fired BBQ to medium heat (around 180-200°C or 350-400°F).
5. Cook the Potatoes: Place the wrapped potatoes directly on the grill grates or on a baking tray over indirect heat. Cook for about 45-60 minutes, turning occasionally, until they are tender when pierced with a fork.
6. Serve: Carefully unwrap the potatoes (watch out for hot steam) and let them cool slightly before slicing open. Add your favourite toppings such as butter, sour cream, chives, cheese, or baked beans.
Hot Tips:
Choose the Right Potatoes: For the best results, select starchy potatoes like Russet or Maris Piper, which have a fluffy texture when cooked. Avoid waxy potatoes, as they tend to hold moisture and can result in a denser texture.
Pre-cook for Speed: If you’re short on time, you can partially cook the potatoes in the microwave for 5-7 minutes before wrapping them in foil and placing them on the grill. This will significantly reduce the grilling time while still giving you that delicious smoky flavour.
Check for Doneness: To ensure your jacket potatoes are perfectly cooked, use a skewer or fork to test their tenderness. They should be soft all the way through. If they need more time, simply rewrap them in foil and return them to the grill for an additional 10-15 minutes.
