Ingredients: 

4 large portobello mushrooms 

2 tablespoons olive oil 

1/2 cup cream cheese, softened 

1/4 cup grated Parmesan cheese 

1/4 cup breadcrumbs (optional for topping) 

1 clove garlic, minced 

1 teaspoon dried Italian herbs (or fresh herbs like parsley and thyme) 

Salt and pepper to taste 

Fresh parsley for garnish 

  

Instructions: 

1. Prepare the Mushrooms: Clean the Portobello mushrooms with a damp cloth and remove the stems. Using a spoon, gently scrape out the dark gills from inside the caps. 

2. Make the Filling: In a mixing bowl, combine cream cheese, grated Parmesan cheese, minced garlic, dried Italian herbs, salt, and pepper. Mix until well combined. 

3. Stuff the Mushrooms: Preheat your wood-fired BBQ to medium heat. Brush the insides of the mushroom caps with olive oil. Generously fill each cap with the cheese mixture. If desired, sprinkle breadcrumbs on top for added texture. 

4. Cook the Stuffed Mushrooms: Place the stuffed mushrooms on a grill-safe pan or directly on the grill grates. Cook for about 10-15 minutes until the mushrooms are tender and the filling is hot and bubbly.
