Artis BBQ Wood-Fired Glazed Lamb Ribs
Ingredients:
2 pounds lamb ribs
1 teaspoon fennel seeds
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup water
For the Glaze:
1/4 cup maple syrup
1/4 cup ketchup
2 tablespoons BBQ sauce
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Instructions:
1. Prepare the Ribs: Preheat your wood-fired BBQ to a low temperature (around 150°C/300°F). In a mixing bowl, combine fennel seeds, smoked paprika, salt, and pepper. Rub this seasoning mixture generously over the lamb ribs.
2. Slow Cook the Ribs: Place a wire rack in a large baking tray or roasting pan and pour the water into the bottom of the tray. Lay the seasoned lamb ribs on the rack in a single layer. Cover with aluminium foil and slow-cook in the BBQ for about 2 hours, until tender.
3. Make the Glaze: While the ribs are cooking, whisk together maple syrup, ketchup, BBQ sauce, brown sugar, and Dijon mustard in a small bowl until well combined.
4. Glaze and Finish Cooking: After 2 hours, remove the foil from the ribs and brush them generously with the glaze. Return to the BBQ and cook uncovered for an additional 25-30 minutes, basting occasionally with more glaze until they are sticky and caramelized.
5. Serve: Once done, remove from the grill and let rest for a few minutes before slicing. Serve hot with your favourite sides.
Hot Tips:
- If you’re using a Fusion, build your fire in the firebox (bottom right section), and transfer hot coals to the grill area (left hand side of BBQ). For an even temperature, make sure you are regularly maintaining the heat underneath the grill, you can do this by ensuring the firebox is roaring away consistently.
- If you’re using a BH BBQ, make sure you are cooking over hot coals, rather than a high flame, this will ensure there is a nice even temperature throughout your wood-fired BBQ glazed lamb ribs.
