BBQ Christmas Ham Recipe

Celebrate the festive season with a delicious Christmas Ham cooked on your Artis open grill wood-fired BBQ fireplace. This recipe is designed for an open grill setup, ensuring a smoky flavour that enhances the holiday experience.
Ingredients
- 1 fully cooked smoked ham leg (about 4.5 kg)
- 1 cup honey
- 1/2 cup brown sugar
- 60g unsalted butter
- 2 tablespoons Worcestershire sauce
- 1/4 cup wholegrain mustard
- Zest and juice of 2 oranges
- Cloves (for decoration)
- 2 tins pineapple rings (optional)
Instructions
- Prepare the Ham:
- Remove the ham from the fridge about 45 minutes before cooking to bring it to room temperature.
- Carefully peel away the skin, leaving the fat layer intact for moisture and flavour.
- Score the fat in a diamond pattern, making cuts about 3 cm apart. Insert cloves into the scored areas. Optionally, attach pineapple rings with toothpicks around the ham.
- Set Up Your Artis BBQ:
- Build a fire in your wood-fired BBQ and allow it to burn down until you have hot coals, aiming for a cooking temperature around 190°C (375°F).
- Arrange the coals to create a two-zone setup: one side with direct heat and the other side without.
- Cook the Ham:
- Place the ham in a foil tray and position it on the cooler side of the grill (the side without direct heat).
- Cook for approximately 1.5 hours, or until a meat thermometer reads 42°C (107°F) in the thickest part of the ham.
- Prepare the Glaze:
- In a saucepan over medium heat, combine honey, brown sugar, butter, Worcestershire sauce, wholegrain mustard, orange zest, and juice. Stir until melted and well mixed.
- Glaze and Finish Cooking:
- Move the ham to the hotter side of the grill.
- Brush some of the glaze over the ham and continue cooking for an additional 45 minutes, basting every 10-15 minutes with more glaze until the internal temperature reaches 52°C (126°F) and the ham is caramelized.
- Rest and Serve:
- Remove the ham from the grill and let it rest for about 10 minutes before slicing.
- Serve with any remaining glaze or your favourite barbecue sauce.
